It is Day 2 of my “maternity leave”. Well, I’m not due for another 9 days, but I had annual leave to clear, so here I am, at home, trying my hardest to keep myself occupied.
Here’s the recipe for the cake:
- 1 cup sour cream
- 1 cup bananas; mashed
- 1/2 cup pecans, chopped
- 1/4 cup butter
- 1 1/3 cup sugar
- 2 eggs
- 3/4 tsp salt
- 1 tsp vanilla extract
- 2 cup plain flour
- 1 tsp baking powder
- 1 tsp baking soda
Method:
- Cream butter and sugar with mixer, adding 1 egg at a time.
- Add vanilla. Sift flour and mix dry ingredients. Add sour cream, bananas and pecans. Bake at 180 degrees celcius for 45 mins, or until skewer comes out clean.
